Pork Roast with Whiskey Peach Sauce & Roast Vegetables

Juicy & Tender Pork Topped with Sweet Peach with a hint of whiskey!

These are my favourite kind of family dinners? Why? It’s so easy to make, so few dishes (since it’s all cooked in the same roasting pan) and you can use pretty much any vegetables you have available for roasting!


Pork Roast with Whiskey Peach Sauce & Roast Vegetables

  • Prep Time: 10 minutes
  • Cook Time: 1-1.5 hours minutes
  • Total Time: about 1.5 hours

*Servings: 4-6

Ingredients:

  • Pork Loin Roast (about 3 lbs.)
  • Pork Rub
  • 1 zucchini, cut into slices
  • 1 turnip, cut into slices
  • 1 eggplant, cut into slices
  • 1 celery stock, cut into slices
  • 1/2 white onion, diced
  • 1 garlic clove, minced
  • Italian Seasoning
  • 2 peaches, peeled, pitted, and sliced
  • 1 oz. Whiskey
  • 1 tbsp. Apple Cider Vinegar
  • 1 tbsp. Honey
  • 2 tbsp. Butter
  • Olive Oil
  • Salt & Pepper

Instructions

  • Coat pork roast in olive oil and then generously season with Pork Rub
  • Heat oil in a large skillet until shimmering
  • Add pork roast and sear each side until browned
  • Coat sliced vegetables in olive oil, garlic, and Italian Seasoning
  • Place vegetables on the bottom of a roasting pan and add pork on top
  • Roast at 375F for 1 -1.5 hours until internal temperature reaches a minimum of 145F
  • When pork resting, make the whiskey peach sauce
  • Add peach slices to the skillet and stir until browned
  • Add whiskey, apple cider vinegar, and honey stirring until it has thickened
  • Remove from the heat and stir in the butter
  • Slice pork and top with whiskey peach sauce and serve with a side of roasted vegetables
