It’s Always Sunny When Ribs Are Around!

We eat like summer so we can forget the rain! Grab the napkins, it’s about to get messy!

Honey BBQ Ribs, Homemade Cornbread & SuperSlaw

  • Total Time: about 40 minutes

*Servings: 2-4

Honey BBQ Ribs

Ingredients:

  • 2 racks of pork ribs
  • 2 Tbsp. Brown Sugar
  • 2 Tbsp. Paprika
  • 1 cup BBQ Sauce
  • 1/4 Cup Honey
  • Salt and pepper

Instructions

  1. Preheat oven to 250F
  2. Mix brown sugar, paprika, salt, and pepper
  3. Rub the rub all over the racks of ribs
  4. Cover the ribs with aluminum foil and bake in the oven for 2 hours
  5. When 2 hours has been reached, remove ribs from the oven
  6. Increase oven to 350F and remove foil from ribs
  7. Mix the BBQ Sauce and honey and coat the ribs (the saucier, the better)
  8. Put ribs back in the oven and cook for 10-20 minutes until Honey BBQ is warm and ribs are cooked through

Homemade Cornbread

Ingredients

  • 1 Cup Cornmeal
  • 1 Cup All-Purpose Flour
  • 1/4 Cup Sugar
  • 1 Cup Milk
  • 1 Egg
  • 1/4 Cup Canola Oil
  • 4 tsp. Baking Powder
  • Butter
  • pinch of salt

Instructions

  1. Preheat oven to 425F
  2. Coat a baking pan with butter
  3. In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt
  4. In another bowl, beat then egg and then mix in the milk and oil
  5. Add wet ingredients into the bowl of dry ingredients and stir until everything is combined (don't overmix)
  6. Pour mixture into the baking pan and bake until a toothpick inserted into the center comes out clean and edges are golden brown (about 20 minutes)

SuperSlaw

Ingredients

  • 1 package of coleslaw salad mix (chopped purple and green cabbage and carrots)
  • 1/2 cup Mayonnaise
  • 1 tbsp. White Vinegar
  • 1/2 tbsp. Apple Cider Vinegar
  • 1 tbsp. Dijon Mustard
  • 1/2 tsp. sugar
  • Salt and pepper

Instructions

  1. Mix the Mayonnaise, vinegars, mustard, sugar, salt, and pepper
  2. Coat the package of coleslaw mix with the dressing
  3. Refrigerate until ready to serve (the longer, the better - up to 24 hours)
