Salted Caramel Cheesecake Stuffed Sugar Cookie Bars

We normally like to go to a show, movie or a fun event for my Dad’s Birthday, but because of Covid, we had a simple small family dinner at the house. So I decided to invent a dessert recipe for my dad. Introducing my new favourite decadent dessert… The Little Stevie! It’s a sugar cookie bar stuffed with salted caramel chips and topped with skor!

Little Stevies

  • prep time: 15 Minutes
  • cook time: approx 30 minutes
  • Total time: approx 45 minutes to an hour

Servings: 9 brownies

Ingredients:

  • 2 3/4 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 tbsp. vanilla extract
  • 18 oz. cream cheese, at room temperature
  • icing sugar, to taste
  • Salted Caramel Chips
  • Skor pieces

Instructions:

  1. Preheat oven to 350F
  2. Spray an 8' x 8" baking dish with nonstick spray
  3. Place parchment paper into the baking dish
  4. Make the cookie dough by mixing together the flour, baking soda, and baking powder
  5. In another bowl, mix together the butter and sugar until mixed smooth
  6. Add 1 egg and 1 tsp. vanilla extract to the mixture
  7. Add wet ingredients to dry ingredients
  8. When well mixed split mixture in half
  9. In another mixing bowl, mix together the cream cheese, 1 tbsp. vanilla, 1 egg and icing sugar (add the icing sugar in small amounts until your desired sweetness is reached)
  10. Press half of the sugar cookie dough mixture into the baking dish in an even layer
  11. Add the cream cheese mixture on top of the sugar cookie dough
  12. Melt the salted caramel chips and pour into the cheesecake mixture
  13. Use a butter knife to spread the mixture throughout the cheesecake
  14. Add the remainder of the sugar cookie on top of the cheesecake to make a top/lid
  15. Top with Skor pieces
  16. Bake for 20-40 minutes until sugar cookie dough starts to brown and is thoroughly cooked through
  17. Let cool for a half-hour to an hour until cooled, then cut into squares
