The Ultimate Dad Board

On Mother’s Day, I made a decadent and delicious Mother’s Day Brunch Board, and a ton of you LOVED it. So for Father’s Day, I thought I would go a little Father and Dad-ify this board by replacing a few items, including changing up the sweet waffles with savory chorizo waffles with hollandaise and switching light egg bites for bacon egg cups!

The Ultimate "Dad Board"

  • Prep Time: 40 minutes
  • Cook Time: 25 minutes
  • Total Time: about 1 hour

*Servings: 4 depending on serving sizes

Ingredients:

  • 1 lb. breakfast sausage
  • Savory Chorizo Waffles (recipe below)
  • Bacon and egg cups (recipe below)
  • Fresh fruit (I used strawberries, raspberries, and grapes)
  • Proscuitto wrapped cantaloupe
  • Hashbrowns
  • Hollandaise
  • Sliced cheese, dad's favorite

Preparation Instructions

First, you will want to make all of your items that need to be cooked. If you are doing the full mom board then you are going to want to follow this order;

  1. Make the bacon egg cups (recipe below)
  2. Make the bacon and sausages
  3. Make the hollandaise
  4. Make the waffles (recipe below)
  5. Make the waffles
  6. Cut all fruit and cheese in the way you want them displayed. I left the strawberries, raspberry and grapes whole, and then just sliced the cheese into triangles to add another shape to the platter

Assembly Instructions

This is the part where all the "art" comes into play. Here is the order I go in to ensure I get a well-balanced board (check timelapse on my Instagram page to see the board being built):

  1. Place the waffles first on two different locations on the board to spread them out
  2. Next place the bacon eggs cups
  3. Then stacks of sausages
  4. Place anything in a bowl (like the hollandaise and the hashbrowns)
  5. Top waffles with crumbled chorizo
  6. Start filling gaps with smaller more moveable items like the melon wrapped prosciutto and cheese
  7. Next, place all of your fruit to add beauty and color to your board. You will want to fill up all the gaps with your fruit. The fruit is the one item I would say it's okay to spread out along your board for color.

Bacon & Egg Cups

  • Prep Time: 5 minutes
  • Cook Time: 20 minutes
  • Total Time: about a half-hour

*Servings: 6 bacon egg cups

Ingredients:

  • 6-12 strips of bacon depending on thickness and length (I used thick long bacon, so I only needed one for each cup, but you might need to overlap smaller bacon
  • 6 eggs
  • Sliced Bread
  • Chives, sliced
  • Salt & Pepper

Instructions

  1. Heavily spray muffin tins with non-stick spray (or else they will stick)
  2. Cook bacon until it is flexible but not crispy
  3. Arrange bacon around the edge of each muffin tin
  4. Use a small round cookie cutter to cut out a piece of bread roughly the size of the muffin tin
  5. Place the round bread pieces into the bacon-wrapped cup
  6. Crack an egg on top of the bread
  7. Season with salt and pepper
  8. Bake for 400 degrees for approximately 20 minutes (until egg whites are fully cooked)
  9. Garnish with sliced chives

Savoury Chorizo Waffles

  • Prep Time: 10 minutes
  • Cook Time: 10 minutes
  • Total Time: about a half-hour

*Servings: 4 waffles

Ingredients:

  • 4 chorizo sausage links
  • 1 1/2 cup flour
  • 2 tbsp. sugar
  • 2 tsp. baking poweder
  • 1 tsp. cumin
  • 1 tsp. chipotle powder
  • 1 egg
  • 1 cup whole milk
  • 1 cup shredded cheese
  • 2 green onions, sliced
  • Cilantro, chopped
  • Salt & pepper

Instructions

  1. Remove chorizo sausages from casings and crumble
  2. Cook crumbled chorizo in a saucepan and saute until fully cooked through
  3. In a large mixing bowl combine flour, sugar, baking powder, cumin, chipotle, and salt and pepper, mixing until combined
  4. In a separate bowl whisk the egg and then add in the milk
  5. Add the dry ingredients to the wet ingredients and mix well
  6. Add half of the crumbled chorizo, cheese, green onions, and cilantro and mix
  7. Heavily spray the waffle iron with non-stick spray and then add waffle mixture
  8. Cook until fully cooked through and crispy on the outside
  9. Top with crumbled chorizo and hollandaise or syrup
